I promised Bethany I would start posting some recipes from our heart-healthy list. I think this may be it, but I’ll keep looking.
3/4 cup egg substitute (equal to 3 eggs)
1/4 tsp. salt (optional)
1 cup low fat cottage cheese
1/4 cup skim milk
1 cup unbleached flour
2 Tbl. sugar or 2 to 3 pkts. of Equal sweetener
Combine first four ingredients in a blender. Blend until smooth. Add flour and sugar and blend again. Spray a griddle with non-stick coating. Cook pancakes until golden on both sides.
Yield: 12 4-inch pancakes (6 servings)
One serving: 2 pancakes
Calories per serving: 120 with Equal, 135 with sugar
Serve with Fruit Sauce:
1 1/2 cups fresh raspberries or sliced strawberries or one 12 oz. package frozen raspberries or strawberries
2 packets Equal sweetener or 4 tsp. sugar
1 Tbl. lemon juice
Fresh fruit: Place 1/2 cup of fruit in blender with sweetener and lemon juice. Blend until smooth. Add remaining fruit and stir into mixture.
Frozen fruit: Thaw fruit. Place half of the fruit in blender with sweetener and lemon juice. Blend until smooth. Drain remaining fruit and stir into mixture.
